Putien Signature Dishes
These dishes, which include the renowned PUTIEN Lor Mee, “100-Second” Stewed Yellow Croaker, and PUTIEN Bian Rou Soup, are considered “Classic Treasures of Fujian.” More than 500 years of history may be found behind this famous Fujian specialty soup prepared with bian rou (similar to wonton dumplings).
Fujian Red Mushroom Seafood Lor Mee
Braised noodles aka lor mee served fujian style is a little different from Singapore style lor mee. This is henghwa lor mee. While Singapore serves a braised starchy broth filled with soy and spices, the henghwa lor mee soup base is more of a cabbage and seafood broth.
To bring the henghwa lor mee to another level, Putien introduces red mushroom into the dish. This is henghwa lor mee with a twist. The pink broth makes it so delightful that it is a dish to savour in. The backstory of the red mushrooms are they are native mushrooms gathered from the forests of Wuyi mountains in the Fujian province.
You can taste the mushroom-ness of the lor mee but not as strong as the traditional chinese mushrooms. A pleasant dish that does not alter the originality of the henghwa lor mee, but good enough to be classified as an innovative one.
‘100-Second’ Stewed Yellow Croaker
A blockbuster as compared to the other croaker dishes on Putien’s menu.
This dish is produced by steaming the yellow croaker fish for 100 seconds, with seasoning of onions, ginger, Fujian aged wine and Puning bean sauce. The Yellow croaker is a fish species with a delicate, sweet flavor frequently encountered in the waters near China and Japan. With such sweet broth cooked from fish, the piping hot dish serves a warmth not only to the stomach but also the hearts of many. Fine fish cooked in a finer manner would delight those who love fish.
Claypot Chicken in Fermented Red Rice Wine
Claypot chicken in fermented red rice wine is a classic to most Southeast Asian Chinese.
Putien’s style of this classic dish is most appetising when served with a bowl of rice. This bowl of goodness consists of black fungus for extra chew to the tender chicken cooked in claypot, which retains the heat for maximum gastro goodness.
The process of making red rice wine traditionally is a tricky one, with many forbidden rules and intricacies. Some of the taboos include – women who are menstruating are not allowed to participate in the wine making, or even touch the wine jars when the wine is fermenting. The wine jar also has to be kept hidden from view until the wine is ready for harvest and consumption.
